Crystallised flowers make marvellous cup cake toppers, says Katherine Miller
There are many edible flowers available but we have used violas, which are perfectly safe to eat.
- Wash the flowers carefully and allow them to dry.
- Apply egg white to each petal with a clean paintbrush.
- Sprinkle with castor sugar and shake off the excess.
- The flowers dry hard and will keep for days in an airtight container.
